My boss likes strong coffee

QUESTION:

My boss likes strong coffee. I work in a deli. The only complaints for coffee comes from my boss. I am using a large commercial drip coffee brewer from BUNN. We weigh out our coffee. Currently we are weighing it out as .30; our air pots we use hold I'd say about 6 cups of coffee. He wants to bump up the weight, but I don't because we did it before and #1. It didn't even get all of the grinds wet, and #2. Customers kept complaining that the coffee tastes burnt and so did he.

So what can I do, without having #1 and #2 happen?
I want to make him happy but also make the customers happy. Please help me, I would be most thankful. Thank you for your time. Kristi

ANSWER:

You're right. Simply adding more and more coffee is not going to help.

Your best bet is to try some different coffees. Look for dark roasted coffees, and coffees marked as French Roast or Italian Roast.

Try a few of these and I think you'll find one that gives you that "strong coffee" taste, without having to use more and more coffee for each brew.
